2 quarts fresh green beans, washed, stemmed and broken
5-6 slices bacon (or ham chunk w/ bone)
1/2 large onion (sliced)
2 cups water
salt/pepper to taste

Directions:
Directions:
In heavy large saucepan fry bacon till almost crisp, (or saute the ham meat) then add onion. Cook till onion is transparent. Add water, beans and salt / pepper. I usually take the other 1/2 of the onion and chunk it into large pieces and lay it around top of the green beans. I also add new potatoes, if I have them...or peel a few potatoes and lay around the top to let steam a while. I then stir them down into the broth to absorb that good smokey flavor.

Bring the mixture to a good rolling boil, then turn down to med/low and let simmer for a good hour..maybe 1 1/2 hours. Adjust salt to taste.
Serve with anything!!!! Or I've made a meal on just this and a slice of bread/butter or cornbread.
