2 c. flour
1 2/3 c. sugar
2tsp. baking powder
1 c. oil
2 tsp. cinnamon
2 c. pumpkin
1 tsp. salt
1 tsp. baking soda

Directions:
Directions:
Preheat oven to 350. Beat together eggs, sugar, oil and pumpkin till light and fluffy. Stir together dry ingredients, then add to pumpkin and mix thoroughly.Spread batter in ungreased 15x10x1 inch baking pan. Bake for 25-30 minutes. Cool.
Frost with cream cheese or buttercream icing.

Cream Cheese Icing:
1 stick margarine
8 oz. softened cream cheese
4 cups (approximately) Powdered sugar.
1/4 c. milk

Cream the cream cheese and margarine together. Slowly add the powdered sugar, mixing until good spreading consistency. The milk is to smooth it out a little if the sugar makes the mixture too dry. Just use a small amount of milk until you have it just right.

These are good made with canned pumpkin (not pumpkin pie filling) and best made with freshly cooked pureed pumpkin.
