"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali
This recipe for Broccoli Salad, by Ellen Millburn, is from The Logan 12th Ward Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
6 pieces of bacon cooked crisp and crumbled ½ cup mayo (do not use miracle whip) 1/4 c sugar 1 tbsp vinegar 1 med sized onion chopped 1 small bunch of broccoli washed and chopped ½ c grated cheddar cheese (medium or sharp is the best)
In a blender mix together mayo, sugar, onion and vinegar. Place in fridge for about an hour. Overnight is fine. Place all other ingredients in a large serving bowl. Right before serving toss with dressing.
