2 egg whites at room temp.
1/4 tsp cream of tarter
1/2 c light corn syrup
1/2 c water
2 c sugar
pinch of salt
1 tsp vanilla
1 c walnuts

Directions:
Directions:
Line jellyroll pan with waxed paper. Place egg whites and cream of tarter in large bowl of electric mixer. Set aside. In heavy three quart pan combine syrup, water, sugar, and salt. Place on low heat and stir until mixture reaches a rolling boil. Boil with lid on for about three minutes. Remove lid and cook until reaches 252 or hard ball stage. Just before syrup is ready beat egg whites until stiff. Remove syrup fro heat and add to egg mix slowly while mixer is still beating the eggs. Beat until mixture losses it's gloss. Beat in vanilla and nuts. spoon on to wax paper and allow to set up until firm. Notes - This recipe works best when it isn't raining.
