2 1/2 c flour
3/4 c unsweetened cocoa
1 tsp. baking soda
1 c brown sugar
1 c white sugar
1 c butter
1 tsp. vanilla extract
2 eggs

Directions:
Directions:
In a small bowl, stir together the dry ingredients. In a large mixing bowl cream the sugars and the butter with a mixer until light and fluffy. Add vanilla and eggs. Beat well. Gradually add flour mixture until well mixed. Chill dough for at least 3 hours. Roll 1 tbsp of dough into a ball. Flatten slightly. Cook on parchment paper at 375 for about 7 minutes. Cool cookies completely on wire rack. Note - I like to add a drop of mint frosting or a drop of coconut walnut frosting in the middle of the cookie. A fudge/peanut butter frosting is also good.
