Ingredients:  
1/2 c minced onion, sautéed in a little butter until tender
10 eggs (I use 6 real, 4 egg beater)
1 lb of good ham, minced
1 16 oz cottage cheese - I use low or no fat
2 tsp baking powder
1/4 to 1/3 c flour (whole wheat is fine)
1/3 c olive oil
16 oz grated monterey jack cheese
1/2 tsp salt
pepper

Directions:
Directions:
Dump it all in, mix it up. Pour into greased 9x13. You can refrigerate here if you want. Bake uncovered at 400 degrees for about 15 minutes. Reduce to 350 and cover with tin foil, bake additional 30 minutes. Sometimes (if you refrigerated after preparing) you may need to uncover and bake a few minutes more until lightly brown on top.
