1tsp. lemon juice
2tsp. vanilla extract
2 tsp. almond extract

Directions:
Directions:
Wash and remove stones from large firm cherries. Soak overnight in 2 tablespoons salt and 1 tablespoon alum for each quart of waster. In the Morning wash to remove all of the salt. Then put cherries into a syrup made with equal parts of corn syrup, sugar, water and strongly colored red food coloring. A little lemon juice improves the flavor and color. Bring cherries and syrup to a boiling point; but do not boil. Let stand 24 hours. Repeat this 3 times. The last time add as much sugar as the first time. Let cool. Ad 2 tablespoons of vanilla and almond extract. Store in small jars. This is a five day recipe.
