1 C shortening
3/4 C sugar
2 C flour
2 tsp baking powder
1/4 tsp salt
1 C cooked mashed carrots
1 tsp vanilla

Icing:
1 C powdered sugar
1 lump butter
orange juice
orange rind

Directions:
Directions:
Mix dry ingredients in seperate bowl. mix shortening sugar mashed carrots and vanilla. Mix together with dry ingredients. Bake 350 15 min. Frost when cool.

This recipe was given to my mom from a good friend of hers named Mary Collie. Mary and her husband Arlo, introduced my mom and dad to each other and the rest is history.
