Sliced Garlic (we like alot)
Crushed Red Peppers
Fresh grated Parmesean and or Romano Cheese

Another recipe that amounts of ingredients depend on how much you make, and according to your personel taste.
Cook Noodles in salted water until they are aldente. As they cook pour olive oil in small pan and begin heating. Add sliced garlic when oil is hot and cook until garlic just begins to turn golden. If you cook garlic to brown it turns bitter. Remove from fire, add crushed red pepper. Pour over noodles. Add cheese on plates after serving.
I usually make alot. I use a 1 lb pkg of noodles and 3/4 to 1 C olive oil. 1 - 2 whole garlic heads. Maybe 2-3 tsp red pepper. You don't want the noodles floating in olive oil. But you want a small amount sitting in bottom of bowl after mixing. If the noodles absorb all the oil just add a little extra after mixing so it won't be dry.

I learned how to make this when we lived in Italy. Mostly eaten as a snack in Italy. We have turned it into a main dish in our house. Serve with garlic bread and salad if you wish. Ken loves a good bottle of wine to compliment this dish. Make sure to cook the noodles with a little bit of bite to them. As they say in Italy, if noodles stick to the wall you have over cooked them. If you like garlic this is a must try recipe. Hope you enjoy it as much as we do.
