MAKES TWO LOAVES

3 eggs
2 cups sugar
1 cup canola oil
3 cups flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. vanilla
2 cups grated zucchini
1 cup chopped nuts

Directions:
Directions:
Beat eggs and add sugar, oil. Add zucchini alternately with dry ingredients. Add nuts.
(Optional, you can add chocolate chips)

Grease two loaf pans or you can make muffins.
Bake 350 F. for 45-50 min. for a loaf. muffins take a shorter time. check after 20 minutes.
