1 1/2c. flour
1tsp. salt
1tsp. baking powder
1/3c. shortening
1c. sugar
2 eggs, reserve 1 white
2tbsp. milk
1/2tsp. vanilla
1/2tsp. lemon juice
Meringue:
1 egg white
1c. brown sugar
1/2tsp. vanilla
2/3c. coconut

Directions:
Directions:
Sift together dry ingredients. Cream shortening and sugar. Add eggs, reserving 1 egg white. Add dry ingredients alternately with milk. Mix well. Add vanilla. Spread 1/4 inch thick in an 8x12 greased pan. For the meringue beat the egg whit until stiff. Beat in sugar, adding 1/3 of a cup at a time. Add vanilla. Fold in coconut. Spread meringue over the first mixture. Bake in a 325 oven for 30 minutes. Cut into squares and cool.
