1 eggplant
1 head of garlic
1 small onion
basil
1 squirt lemon juice
1/2 tsp salt
1 tablespoon olive oil 1/2 tsp black pepper

Directions:
Directions:
Wrap garlic in foil. Place eggplant on a baking sheet and roast with roma tomatoes on 450 for 15 minutes. Add other ingredients to cooked and mashed roasted eggplant, garlic & tomatoes. Bake another 15 minutes until soft. Serve with pita chips or crackers
