2-3 eggplants
olive oil
onions
salt
whole tomatoes (28 oz can)
garlic
basil
grated cheese

Directions:
Directions:
Heat olive oil. Peel eggplant. Salt and slice them on an angle. Saute each slice until translucent, set aside. In leftover oil, saute 2 med onions and 4-5 cloves of garlic. Add tomatoes and crush them with the back of a wooden spoon. Cook over med. heat about 25 minutes adding 1 teaspoon of sugar. Crush some dried basil leaves and add to the sauce. In a medium casserole dish, layer sauce first, then eggplant, grated cheese and continue until the last layer is sauce. Top with grated cheese and a little more basil. Cover and refrigerate until serving.

You can use crushed tomatoes, but Grandma Accorso always used whole. This recipe was passed down to grandma and her sisters from their mother Mary. We always had this dish at all holidays - Special memories of having it on Christmas Eve when we came back from midnight mass.
