1 2/3 cups unsweetened pineapple juice
1/3 cup rice wine vinegar
1/4 cup olive oil
3 T. soy sauce
3 T. chopped shallots
4 cloves garlic, minced
1 1/2 tsp. salt
1 tsp. Louisiana hot sauce
3/4 tsp. ground cumin
3/4 tsp. pepper
6 bone-in pork loin chops (3/4 inch thick)

Combine first 10 ingredients. Place chops in large zip top bag; add half of mixture, seal. Turn to coat and refrigerate for 4-5 hours, turning occasionally. Cover and refrigerate remaining marinade for basting.
Drain and discard marinade. Grill chops over medium heat 8-10 minutes each side, basting with reserved marinade.
