Mexican Potato Casserole Recipe

1 tsp. olive oil
1/2 pound ground beef
2 bell peppers, chopped
1 tsp. chili powder
1/2 tsp. black pepper
1 T cumin
1 T garlic powder
3/4 cup shredded cheddar cheese
2 large baking potatoes, scrubbed and thinly sliced
2 tomatoes, chopped
8 green onions, chopped

Preheat oven to 350. Spray a 13x9 baking dish with cooking spray. In a large skillet heat oil and add beef and green peppers. Cook 6-8 minutes. Add tomatoes, chili powder, pepper, cumin and garlic powder, Stir as needed while cooking for an additional 5 minutes.

Layer in baking dish with potatoes. Cover and bake 40 minutes. Uncover and top with cheese. Cook an additional 10 minutes or until potatoes are done. Serves 4.
