1 can (15 - 16 oz) of pink salmon
1/3 c minced onion
1/2 c flour
1 egg beaten
1 1/2 t baking powder
1 1/2 c Crisco for frying

Directions:
Directions:
Drain salmon. Set aside 2 T of juice. Make sure all the little bones in the salmon are removed and thrown away. Crumble all the salmon in a bowl, mix salmon, egg, and onions until sticky. Stir in flour. Add the baking powder to the salmon juice - it will "fluff up" as you add to salmon mixture. Make small patties. Put enough oil in the pan to just cover the bottom - you can keep adding the oil as you continue to keep frying patties. Cook on each side until just brown (approximately 5 minutes) - then put on paper towels to drain.
