1 medium butternut squash, peeled and cubed
8 oz. fresh whole leaf spinach
1 medium red onion
3/4 c. Craisins
Wegman's Basting Oil
2 T. peanut or Canola oil

Directions:
Directions:
Add oil to large skillet. Add squash and cook until firm but tender. Avoid browning if possible. Drain off oil and transfer squash to oven safe dish.

Cut onion into strips approximately 1 inch long by 1/4 inch wide. Saute onions until barely tender. Drain and add to squash.

Add spinach and craisins to mixture. Stir in basting oil to coat.

Cook at 350 until spinach is wilted and contents are hot (about 20 minutes).
