Ingredients:  
1 1/2 lbs. fresh broccoli chopped - stems and florets
1 large onion - chopped
1 large carrot - chopped
1-2 cloves garlic (chopped, crushed, or diced)
1-2 russet potatoes
5 c. chicken stock
2 tbsp. extra virgin olive oil (approx.)
salt and pepper to taste
* dash of cayenne - for a little zing

Directions:
Directions:
1. saute onions, garlic, carrots in EVOO until onions are translucent
2. add stock, broccoli, potatoes, salt and pepper
3. bring to a boil, reduce heat, cover , and simmer for 15 - 20 minutes, until all veggies are cooked
4. in batches, puree soup in blender and return to pot, season to taste

possible additions to recipe: celery (about 2 stalks), lemon juice/zest, spinach (add during pureeing), red pepper flakes
