"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
2 8oz cream cheese softened 1 C real mayo 1 C Parmesan cheese 1 14oz can artichoke hearts drained and chopped 1 small pkg frozen spinach thawed, drained and squeezed as much water out as possible 1 tsp garlic powder 1 C shredded mozzarella cheese
Mix together everything but the mozzarella cheese and put into an 8X8 baking dish. Sprinkle mozzarella cheese over the top. Bake at 350º for 20 to 25 minutes until hot and bubbly.
I made this up after various tries at duplicating the Applebee's recipe. I think I came close. Serve with tortilla chips or thinly sliced and toasted baguette slices. If this seems too thick....add more mayo or a smidge of milk.
