Boil: 1 onion cut into chunks 6 pieces of yellow squash 1 T. sugar 1 T. salt 1/2 T. pepper 1/2 c. water 1 T. butter 1/2 c. rice separate bowl: 12 Ritz crackers (crumbled) 1 t. parsley flakes 4 oz. grated cheese 1 T. butter
Boil onion, squash, sugar, salt, pepper, water, rice until tender. In casserole bowl combine: Ritz crackers crumbled, parsley flakes and butter. Add into casserole bowl cooked squash mixture (strained - no liquid). Stir and top with grated cheese. Bake at 350º for 30 minutes.
