This recipe for Superb Mushroom Soup, by Sandra Winetroub, is from Family Traditions,

1/2 stick butter 1 chopped onion 3 boxes chopped mushrooms 3 chicken bouillon cubes 1 cup dry white wine 6 cups water 3 cups whipping cream
Saute onions. Cut stems off mushrooms and put in food processor. Add stems and butter to onions. Add wine, chicken cubes and water, along with rest of mushrooms and cream. Cook over medium heat for 45 minutes. Add salt and pepper to taste.
