3 C Sugar
1 1/2 C cooking oil
4 eggs
3 tsp vanilla
3 C flour
1 tsp baking soda
2 tsp Baking powder
1 1/2 tsp salt
3 level tsp cinnamon
shredded (grated) zucchini about 3 cups

Directions:
Directions:
Cream sugar, oil, eggs and vanilla together. Add the dry ingredients to the creamed mixture. Add the zucchini which has been unpeeled and grated. Can only use 1 cup of grated zucchini and it's plenty. add nuts about1/2 c if desired.
Bake in greased and floured loaf pans or you can use a 1 lb coffee can half full of dough for a round cake. Bake 325 for 1 hour or until done. Or you can put in 9x13 pan for a cake.
