1 16-ounce can of pumpkin or 1 3/4 cups fresh/frozen pumpkin
2/3 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
3 eggs
1 5-ounce can (2/3 cup) evaporated milk
1/2 cup 2% milk

Directions:

In a large bowl mix your pumpkin, sugar, cinnamon, ginger, and nutmeg. Add eggs. Use a hand mixer and beat with the wire whisk beater until combined. Gradually add in evaporated milk and milk. Mix well. Put your crust in the pie plate and place the pie plate on the oven rack. Pour the filling in the pie crust. Bake at 375 degrees for 25 with the edges covered so they don't burn then remove foil around edges and bake for 25 more minutes. Let cool on a pie wire rack.
