Mom's Vegan Meatloaf Recipe

1 lb. burger-style crumbles, thawing unnecessary
1/2 c. quick cooking oatmeal
1 T. soy sauce
2 tsp Ener-G Egg Replacer beaten with 2 T. water
1/2 medium onion, finely diced
ketchup

Directions:
Directions:
Mix all ingredients together and press firmly into a greased loaf pan. Cover top liberally with ketchup and bake at 375 degrees for 35-40 minutes.

Helpful hints: Soak the oatmeal before adding it to the mix to prevent the loaf from crumbling. I like to generously mix ketchup into the mix also. I use the Morningstar Farms or Boca frozen crumbles.
