"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
1-2 lbs of stew meat cubed 1 c. potato cubed 1 c. carrots sliced 1 c. onion diced 1 c. celery chopped 1 can whole tomatoes (chopped or puree) 1/2 c. barley salt pepper
Brown meat in a skillet. Place meat, potatoes, carrots, onion and celery into 6 qt crock pot. Pour tomatoes on top. Pour in water up to 1 inch from top. Salt & pepper to taste. Cook on low about 6 hours. Bring to boil and add barley 1/2 hour before serving. The longer you cook the more tender the meat and vegetables will get. Also, see spatzle recipe for dumplings.
