- 1 cup bulgur (or cracked wheat)
- 4 tbsp Sesame Ginger dressing (preferred: Newman's Own Lighten Up Low Fat Sesame Ginger Dressing)
- 2 carrots, chopped
- 1/4 apple, chopped
- 1/4 cup chopped green or red pepper (optional)
- 3 tbsp feta cheese (optional)

Directions:

Cook bulgur according to instructions. (Bulgur is a grain, similar to rice, but much firmer than rice.) Drain bulgur well, add chopped carrots, green or red pepper, apple, feta cheese, ginger sesame dressing, toss.

Bulgur is a common ingredient in Turkish, Middle Eastern, Indian and Mediterranean dishes. I find it in the organic section of the grocery store (Bob's Red Mill).Taste wise, comparable to rice, texture wise, comparable to pasta al dente. Really versatile, delcious, and nutritious!
