2 1/4 cups biscuit mix
3 T oil (I use olive)
1 large egg (or 1/4 c egg substitute)
1 (10 oz) bottle club soda

Directions:
Directions:
Combine biscuit mix, oil, and egg in medium bowl. Beat at medium speed with electric mixer until smooth. Slowly add club soda, beating until smooth.

Bake in pre-heated waffle iron until golden brown,
