4 green chiles pasilla
1 lb. fresh cheese, sliced into small pieces
2 eggs, separated
1/3 c. flour
1/2 c. oil

Directions:
Directions:
Cook the chiles on the stove, open fire, until slightly burnt. Put cooked chiles in a plastic bag. After 2 hours, remove chiles. Peel skins, then cut a slit in each chile and remove seeds. Stuff with small slice of cheese. Put oil in frying pan (medium heat). Whip the egg whites until frothy, then mix in egg yokes. Cover chiles with flour. Dip floured chiles in egg batter. Fry chiles in hot frying pan, flipping over when the egg is cooked on one side.
