2 c. boiled and mashed sweet potatoes 1 1/4 c. sugar 1 t. lemon extract 1 T. vanilla extract 2 t. ground nutmeg 3 eggs 1 T. heavy cream 6 T. butter or margarine 1 t. all-purpose flour 1 unbaked 9 inch pie shell
Preheat the oven to 350º. With a mixer on medium speed, blend all the ingredients until smooth. Spoon the filling into the unbaked pie shell. Bake for 1 hour or until firm.
