3 eggs
1 c sugar
2/3 c plain pumpkin
1 tsp lemon juice
3/4 cup plain flour
1 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg

Filling
1 c powdered sugar
1 8 oz cream cheese
4 Tbsp butter or margarine
1/2 tsp vanilla

Directions:
Directions:
Beat eggs at high speed for 5 minutes, gradually adding sugar. Stir in pumpkin and lemon juice. In another bowl, stir together plain flour, baking powder, salt, cinnamon, ginger and nutmeg. Fold into pumpkin mixture. Pour into a greased cookie sheet. Bake at 375 for 15 minutes. Turn into dish towel that has been sprinkled with powdered sugar. Roll up jelly roll fashion. After roll is cool, unroll and spread with filling. Reroll without the towel.

Filling
Combine ingredients and beat until smooth.
