2 1/2 c plain flour
1 tsp salt
1 tsp baking soda
2 tsp cocoa
2 c sugar
2 c oil
1 c buttermilk
1 tsp vinegar
2 eggs
1 tsp vanilla
1 oz red food coloring

Directions:
Directions:
Cream sugar, oil, and eggs. Beat well. Add vinegar and food coloring. Stir in flour, cocoa, baking soda and salt. Mix well. Add vanilla and buttermilk. Bake at 350 for 30 minutes. Makes 3 layers.

Icing
1 stick margarine
1 8 oz cream cheese
1 box powdered sugar
Combine ingredients and mix well. Spread on cake.
Optional: Put sprinkle coconut over cake and in between layers.
