2 - Anaheim chiles & 2 - Jalape�os
Extra Virgin Olive Oil
1 large garlic clove
4oz shredded Monterey Jack cheese
Salt and Ground Pepper
1.5lb. of Ground Beef

Directions:
1. Light a grill. Rub the Jalapenos with olive oil. Thread them onto a skewer and grill until charred all over. Repeat this for the Anaheim chiles. Discard the stem and seeds. Chop the garlic, peppers, and chiles and transfer to a bowl. Mix in the cheese and season with salt and pepper.
2. Cut 4 squares of wax paper and divide the beef among them. Pat the beef into 8 patties a little thicker in the middle. Then using a spoon or a measuring cup mound 1/4 of the cheese mixture into the center of 4 of the patties. Top with the remaining patties. Flatten the centers so they are even and press and seal the edges of the patties together. Brush with olive oil and season with salt and pepper.
3. Grill to your liking. The cheese should bubble out just a little bit on one of the sides. Serve with your choice of condiments and enjoy.

Instead of the Monterey Jack cheese I have use Pepper Jack cheese to give the burger just a bit more kick.
