cup chopped onion
4 oz. light cream cheese (softened)
tsp ground cumin
4 cups chopped cooked turkey or chicken
1- 10- oz Healthy Choice cream of chicken soup
1- 8 oz. carton light dairy sour cream
1-cup skim milk
1-2 T. Jalapeno pepper strips, chopped
cup shredded reduced fat sharp cheddar cheese
12 6 or 8-inch flour tortillas

Directions:
Cook onion, covered, in a small amount of water in skillet until tender, drain. Add cream cheese, cumin, and 1 T. water. Mix well. Add turkey. Heat tortillas until softened either in microwave or oven. Spoon about cup turkey mixture onto each tortilla; roll up. Place seam side down in 13x9 pan sprayed with cooking spray. Combine soup, sour cream, milk and peppers; pour over enchiladas. Bake covered, in a 350 degree oven about 40 min. or till heated through. Then, sprinkle with cheddar cheese and bake and additional 4-5 min. uncovered until cheese in melted. Makes 12.
