1 tbsp. fruity olive oil
1 green pepper, cut into 3/4 in. squares
1 medium onion, chopped
1 medium zucchini (about 6 oz.), cut into 1/2 in. slices
5 cloves garlic, minced
3/4 lb. tomatoes, skinned and diced or 1 large can tomatoes, chopped
1 tbsp. minced parsley
Salt
Freshly ground pepper
Mashed potatoes

Directions:
Directions:
Heat oil in large saucepan and sauté pepper, onion, zucchini, and garlic until the onion is wilted. Add the tomato, parsley, salt, and pepper and cook over medium heat, uncovered for 30 minutes. At end of cooking, turn up heat to reduce the liquid - stew should be thick. Put into casserole dish or pie plate. Cover stew with mashed potatoes and brown under broiler. May be served as main course with salad and bread or side dish.
