1 1/2 c. long grain rice
2 cans chicken broth
2 cans rotel tomatoes
fresh cilantro (handful)
garlic salt
lemon pepper

Directions:
Directions:
Turn electric skillet on to 6-7 (medium). Cover bottom of skillet with oil (1 T.). Add rice. Brown it. Add chicken broth, rotel tomatoes, fresh cilantro, garlic salt and lemon pepper. Bring to a boil. Lower temp to 2 (low). Cook for 10 minutes (do not remove lid during the 10 minutes). Check consistency if too watery cook longer.
