Sliced summer squash
Two cups corn flake crumbs
3 beaten eggs with a dash of water
3 tbsp butter
salt
pepper
pinch of garlic
parsley flakes
Flavor variation: Italian seasoning

Directions:
Directions:
Fill a bowl with Cornflake crumbs.
Whip eggs and a splash of of water in a separate bowl.
Simmer butter in a fry pan with a pinch of garlic (to taste).

Hand dip slices of summer squash into beaten eggs, covering them completely. Then dip the slices into the dish of corn flake crumbs.

Place the slices into a pan of simmering butter and a pinch of garlic. Season liberally, to taste, with salt and pepper. Turn the slices as they brown and sprinkle parsley flakes onto them prior to removal from the pan.

You can also substitute any other type of squash or zucchini.
