2 tbsp coconut or olive oil
2 boneless skinless chicken breasts, cut into 1/2 inch pieces
salt
black pepper
1 tbsp unsalted butter
1 tbsp minced shallot
1 garlic clove, minced
1/4 c fat-free chicken broth, vegetable broth or water
3 green zucchini, julienned
3 yellow zucchini, julienned
1/4 c julienned fresh basil
2 1/12 ounces goat cheese crumbled

Directions:

Heat the oil in a large saute pan over medium heat. Season the chicken with salt & pepper and saute until cooked, then transfer to a bowl and set aside. Drain all but 1 tbsp oil from the pan. Add the butter and shallot to the pan and saute until soft, then add the garlic and saute until fragrant. Add the chicken broth and zucchini and saute for 3 - 4 minutes, or just until soft. Remove from heat. Return the chicken to the pan, add the basil, and stir to combine. Divide among four plates and top it with the goat cheese, serve immediately
