10 small tortillas
1 lb. ground beef
1 15 oz. can corn (drained)
1 cup salsa
1 15 oz. can tomato sauce
1 pkg. taco seasoning
1 16 oz. tub cottage cheese (small curd)
2 eggs
1 tsp. ground oregano
1 1/2 cup cheese (cheddar/Monterey jack)

Directions:
Directions:
Preheat oven to 375. Brown the meat. Add the corn, salsa, tomato sauce, and taco seasoning to the meat. Cook on medium heat for 5 minutes. In a separate bowl, mix the cottage cheese, eggs, and oregano. Spray a 9x13 baking dish. Place 5 tortillas in the baking dish, covering the bottom. Spread 1/2 the meat mixture on the tortillas. Pour the cottage cheese mixture over the meat. Place the other 5 tortillas over the cheese. Spread the rest of the meat mixture. Cover with shredded cheese. Cook for 30 minutes or until cheese bubbles. Garnish with lettuce, tomatoes, and other desired sides.
