1 qt. water
1 small onion, chopped
1 box of chopped broccoli or 1 lb fresh
1 beef bouillon cube (consomme or beef base)
1 1/2 stick margarine
1 1/2 c. flour
1/4 tsp. garlic powder
1/4 tsp. white pepper
salt to taste
2 lbs of cheddar or American cheese, cubed
1 qt milk
1/8 can of beer

Directions:
Directions:
Bring water and onion to boil in a large soup pot. Add the seasonings and half of the chopped broccoli. Bring to a boil again. Add the soup base and lower heat. In a separate sauce pan, melt the margarine, add the flour, stirring constantly to make a roux. When the roux has thickened, remove from heat. Gradually stir roux into the soup with a whip, whipping to avoid lumps. Heat the milk and cubed cheese to just below the boiling point until the cheese melts, stirring constantly. Blend the cheese sauce into the soup and add remaining broccoli. Just before serving, add beer and mix well.
