2 Tbsp Butter
2 Tbsp Flour
2 Cups Milk
8 oz shredded cheese
1 small onion, chopped
2 celery stalks, chopped
1 small onion, chopped
2 red new potatoes, diced
2 Tbsp Fresh herbs: basil, oregano, rosemary, thyme: chopped
1 Can chicken broth
2 Cloves Garlic
1 can corn, drained
2 Tbsp Olive Oil

Directions:
Directions:
In a saucepan, heat up olive oil. Add Onions, Celery and Garlic. Heat until onions are translucent. Add fresh herbs. Next, add chicken broth and potatoes. Cook about 10 minutes, until potatoes are soft. Add corn to heat. Once heated, pour into a colander to drain out chicken broth. Set aside.

In a separate sauce pan, melt butter. Slowly incorporate flour. Next, slowly add milk. Heat about 5 minutes on medium heat until milk mixture is thick and bubbly. Add cheese. Stir in veggie mixture and serve!
