One of the following: Magi-Cake Strips,
Heavy Duty Paper Towels or Clean Dish Towel

Try one of these methods:

1. Once you have filled your cake pans with batter, spin your pan on the counter top two or three times.
(The spinning will force the batter higher on the sides of the pan and lower in the center, where batter normally rises higher)

OR
2. Use a product called Magi-Cake Strips, which are bands covered with aluminized fabric that you place around the outside of the cake pans. The strips are moistened with water and even out the temperature so the cake rises evenly.
(You can also use moistened paper towels and secure them around the outside of the cake pans before placing them in the oven for the same effect: a level cake.)

OR
3. When the cake is finished baking, take a damp paper towel or clean damp kitchen towel and gently press down on the cakes to make them level.
