3 c all-purpose flour
1 tbsp baking powder
1 tsp salt
2 tsp black pepper, ground coarsely
1 stick unsalted butter, chilled and cubed small
1 1/2 c cheddar cheese, grated
4 green onions, white and green parts, sliced thinly
8 slices bacon, preferably applewood smoked
6 to 12 oz buttermilk
1 egg
2 tbsp water

Preheat oven to 400 Fahrenheit.

Cook bacon until crisp. Cool, chop and set aside. Prepare baking sheet with parchment paper.

Blend flour, baking powder, salt and pepper in a stand mixer fitted with the paddle attachment on low speed. Gradually add small cubes of chilled butter until mixture resembles wet sand and coated butter is in pea-sized pieces. Add cheese, onion, and bacon, mixing until just blended. Add 6 oz buttermilk and mix by hand. Then add buttermilk one tablespoon at a time until the dough forms a ball. Shape ball into a disk on the parchment paper about 8" in diameter and 1/2" thick. Cut into 8 to 12 wedges, not separating them. Beat egg and water until blended and brush the top of the disk. Bake 18-20 minutes. If you prefer smaller scones, divide the dough in half and form two smaller disks.
