2 white potatoes
2 red potatoes
2 sweet potatoes
2 c. mayonnaise
1 1/2 tsp. chopped Vidalia onion
1 1/2 tsp. chopped celery OR 1/2 tsp. celery seed
2 eggs, hardboiled
1 T. sweet pickle juice
1 T. apple cider vinegar
salt and pepper to taste

Directions:
Directions:
Peel and cut potatoes. If desired, some skin may be left on red potatoes. Cook until tender. Drain and soak in cold water until cool, changing water as needed to keep cold. Drain and pat dry. Chop eggs and set aside. Mix together remaining ingredients. Add to potatoes and gently mix in eggs. Chill and serve.
