2 C flour
1/2 tsp salt
1 tsp. baking soda
1/2 C shortening or 1 stick butter
1 C sugar
2 eggs, separated
1/4 C milk
3 ripe bananas mashed
1/4 C nuts (optional)

Directions:
Directions:
Mix oleo, sugar and egg yolks. Mix dry ingredients together in a separate bowl. Mix bananas & milk together. Alternately add banana mixture & dry ingredients mixture to sugar mixture (add some flour mixture then milk & bananas. Add remaining flour mixture then remaining milk & bananas). Fold in stiffly beaten egg whites and bake in greased loaf pan for 45 minutes at 350. Store in refrigerator.
