1/2c. egg whites
1 1/4c. sugar
1/4tsp. salt
1/2 tsp. vanilla
2 1/2c. shredded coconut

Directions:
Directions:
Beat egg whites until frothy. Gradually add sugar, beating all the time. Continue beating egg whites until very stiff and glossy. Fold in the salt, vanilla and coconut. Drop by heaping teaspoons onto an ungreased parchments paper on baking sheet. Bake at 325 for 20 minutes or until set and lightly browned. Remove from oven and put a wet towel between baking sheet and parchments paper. Let stand one minute. Then remove paper to finish cooling.

* Instead of coconut you can also use 2 cups chopped nuts: peanuts, walnuts, pecans or blanched almonds.
