1 1/4c. cake flour
3/4c. sugar
2tsp. baking powder
1/2tsp. salt
1/4tsp. cream of tartar
1/4c. oil
1/3c. orange juice
3 egg yolks
1 1/2tsp. grated orange rind
3 egg whites

Directions:
Directions:
Mix the first 4 ingredients into mixing bowl. Make a well and add the oil, orange juice, egg yolks and orange rind. Beat with a spoon until smooth. Add cream of tartar to the egg whites in a separate bowl. Beat egg whites into very stiff peaks. Fold egg whites into first mixture until well blended. Do not stir, gently fold together. Turn batter into a 8 or 9 inch square pan. Bake at 325 for one hour. Turn pan upside down immediately and make sure that the surface doesn't touch anything until cool. Loosen sides of cake to remove from the pan. Frost with orange frosting.
