2 lbs. boiled squash
2 or 3 tablespoons grated onion
2 carrots grated
1 can cream of chicken soup
1 cup sour cream
1 (8 oz.) pkg herb seasoned stuffing
1 stick melted oleo
1 (8 oz.) can water chestnuts, sliced

Directions:
Directions:
Combine squash, onion, carrot, and water chestnuts. Blend undiluted soup and sour cream; stir into vegetable mixture. Toss together stuffing and oleo. Pour half the stuffing in a shallow 3 qt. baking dish. Pour vegetable sour cream mixture over layer. Top with remaining stuffing. Bake in oven for 30 minutes.

I'm not sure from where I copied this recipe, but I was trying to find one that was close to the recipe that Aunt Opal and Truell made at their annual Thanksgiving meal. I always liked it.
