This recipe for Cheese Straws, by Jackie Ward, is from A Taste of the Spirit - Book II,

2 c. flour 1 tsp. salt 1/4 tsp. cayenne pepper 1 lb. extra sharp cheddar 1/4 lb. butter
Sift the first 3 ingredients together. Grate the cheese and work the butter into the cheese. Mix with flour and work to a smooth dough. Roll very thin, cut with pastry wheel and bake @ 375 for 9/10 minutes.
This recipe is very labor intensive but worth the effort. You can freeze the straws before cooking. Then cook as directed.
