4 c. chicken, cooked and chopped
3 celery ribs, diced (about 1 1/2 c.)
1 c. sweetened dried cranberries
1/2 c. chopped pecans, toasted
1 1/2 c. mayonnaise
1/3 c. honey
1/4 tsp. salt
1/4 tsp pepper
Garnish: chopped toasted pecans

Directions:

Combine first 4 ingredients.
Whisk together mayonnaise and next 3 ingredients. Add to chicken mixture, stirring gently until combine. Garnish with chopped pecans, if desired.

I like to serve this in individual pastry tart shells. You can make your own from refrigerated pie crusts, or frozen tart shells. Delicious and pretty, too!
