1 c. sifted cake flour
7/8 c. sugar
3/4 c. sugar
1-1/2 c. egg whites (about 12 to 15 egg whites)
1-1/2 t. cream of tartar
1/4 t. salt
1-1/2 t. vanilla

Directions:
Directions:
Sift together flour with 7/8 cup of sugar at least 3 times. Set aside. Beat egg whites until foamy. Gradually add 3/4 cup sagar (about 2 T. at a time). Beat until stiff peaks. Sift small amounts of flour mixture over batter and fold in. Bake at 350-375 degrees for 35-45 minutes until medium golden brown on top. Top will also begin to crack on top when done. Immediately invert cake pan until cool.
Remove from cake pan.

Frost with thin layer of buttercream frosting. Freezes well either frosted or unfrosted. Be sure to spread any leftover frosting on saltines for a quick sweet treat.
